Are you looking for "vacation-like" digs for the holiday or just a place to crash to get your bearing so you can start your househunting. Your timing isn't the greatest...but you may want to check ResortQuest and see what they've got as far off the beach as possible (or Motel 6?).

grartist: I think you could find a small studio with kitchenette at the Villages of South Walton. You may want to pm Cork on the Ocean because she may know something that's available there. There are also some new studios available at a place next door to Villages of South Walton called the inn at Seacrest Beach. http://www.vrbo.com/80063. They are like hotel room suites and seem quite reasonable.
Also see if Hisbiscus in Grayton Beach is booked already -- search the web for them. It's a B&B.
Also, do a search on http://www.VRBO.com (vacation rentals by owners) for Destin or South Walton.
I found a decent inexpensive 1 bedroom condo at Horizon South in Panama City Beach across the street from the beach last July. So, do a search for Horizon South (though that's probably about 20 miles from Destin).
It will be tough to find a place at the last minute, but I've seen a few here and there recently.
I hope your search is successful. Let us know what you find (since we tend to be curious about how it works out for people on this board).

If you're looking in Destin or SoWal west of the outlet mall, I'm getting about $100/night for Suburban Lodge in Destin and Comfort Inn Niceville with availability on your dates as of tonight.
We stayed at that Comfort Inn a coule times when we moved down here in 1998. Clean and popular with the Eglin AFB crowd. A coule of times, I think Mr. Mouse and I were the only civilians in the breakfast area. Hampton Inn on US 98 in Mary Esther ('burb of Fort Walton Beach) is also showing availability on those dates.
