Mmm, now that sounds good. I have swiss steak in the crock pot. We always have that with mashed potatoes so I'll be missin those! I should try the mashed califlower sometime but I don't have any for tonight. Not sure what we are going to have with it.

The mashed cauliflower is really good if you doctor it up. I put garlic salt, pepper, cheese in mine. Really, Really good. I also saute' cabbage alot. I have really learned to love it and I don't miss the taters. Another option, if you get some saurekraut, drain it and put it in a skillet, with some beef bouillion and cover it with water and let it simmer for about 45 minutes, it takes the sourness out of it, but it is really, really good. It is a quick side dish to any meal. Also, my favorite thing to do is get the broccoli, cauliflower mix in the bags in the fresh produce department, stab the bag with a fork a couple of times, put in microwave and nuke for about 7 minutes. Take out and put in a bowl. Drizzle with EVOO (extra virgin olive oil) then add garlic salt, oregano, and basil, mix well. Quick and easy and I love it. Just a few suggestions.

Thank you!!! I think I'll make a run to the store before dinner.

Here is a good recipe for Parmesan Mashed Cauliflower!

Serves 6
1 head cauliflower
1/4 cup grated Parmesan cheese
2 Tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt, or to taste
1 teaspoon pepper, or to taste

Tools
Steamer basket and pot
Bowl
Potato masher

Prep Time: 15 minutes
Total Time: 15 minutes

  1. Wash the cauliflower well (dirt can collect in hard-to-reach places).
  2. Cut the cauliflower into pieces and place into a steamer basket in a pot over boiling water.
  3. Steam cauliflower until a fork can easily glide into it?about 8 minutes.
  4. Place the cauliflower into a bowl and crush with a potato masher until consistently mashed.
  5. Add the Parmesan cheese, olive oil, oregano, and thyme. Stir to combine. Season with salt and pepper, to taste.
  6. Serve warm.
For a creamier version that will better approximate mashed potatoes, delete the 2 Tablespoons of olive oil and add 1/4 cup of butter and 1/4 cup of milk.

kdw, thanks, I'm going to try this recipe. Does the rest of your family eat SB or do you cook something different for them?

My son is not a fan of the cabbage or cauliflower, SO I just alway's have a supply of instant mashed potatoes on hand for him, and fix that or some other veggie that he will eat. It works out well.

I tried the cauliflower. Can I just say I miss the potatoes!!! That's okay, it's something I need to get used to. The steak turned out tough and the salad was so so and the cauliflower was okay. I'm hanging in there and will tough it out.

Checking in on everyone...how ya doing? I just got home from the grocery store and I am so mad. Everything I love ( fattening stuff I used to eat) was on sale and so tempting. I'm a sucker for sales usually but I held strong. It was not easy. My sugar craving has not gone away yet and I remember the last time it did by now. I won't give in or give up yet. :D

Does anyone even know if there is a WW in Sowal? I have found it really works but I cannot be driving to Panama City or Destin.....

4 pounds is a good start! I need to get serious again too. Thinking about getting into a bathing suit at the end of this month is scaring me.
